Dehydration synthesis is a building process. Molecules of glucose are fastened together when H+ is taken from one molecule and OH- is taken from the other molecule, freeing up bonding sites. The H+ and OH- join together to make a water molecule, so they don't go back where they came from. Dehydration refers to the removal of that water molecule. Synthesis refers to the building or "putting together" process.

Hydrolysis is a breaking apart process that breaks glycogen into molecules of glucose. Water molecules contribute H+ and OH- to handle the unshared electrons when glucose molecules are separated from each other. This keeps the glucose molecules from going back together. Hydro- refers to the water molecule that needs to be used. Lysis refers to the breaking process, as lysis means "loosen".
