Recipe Number 187
Banana Nut Bread

My wife always makes this delicious bread and it is her recipe. For the best tasting bread, she always uses bananas that are turning brown.

Ingredients:

2 cups all purpose flour ¼ cup shortening
¾ cup sugar 2 large eggs
¼ teaspoon salt 1 cup bananas, mashed
2 teaspoon baking powder 1 cup pecans, chopped
¼ teaspoon baking soda
Preparation:
In a bowl, cream the sugar and shortening. Add the eggs and continue beating. Beat in the mashed banana. Sift the flour, salt, baking powder, and baking soda. Add slowly to the creamed mixture, beating until a smooth batter is obtained. Blend in the pecans. Pour into a non-stick 1 pound loaf pan and bake at 350ºF for 60 to 70 minutes, or until loaf springs back to the touch, or a straw inserted into the loaf comes out clean. Allow to cool for 1 hour before removing from pan.

I recently was given the best banana nut bread I've ever tasted.
I asked my friend for the recipe and she smiled. I asked her again later and she said:

1 pack of banana nut bread mix from the grocery store
2 very ripe bananas
3 beat well with mixer

bake. it was the best I've ever tasted, and very moist. No big mess, not much time and great results. I'm going to call it my "home baked banana nut bread". ha

This is from my favorite little cookbook, it has really simple recipes.
3-4 ripe bananas, mashed
3 eggs
2 c. sugar
2 c. self-rising flour
1 c. shortening
2/3 c. finely chopped walnuts or pecans

Grease and flour bottom only of loaf pan. Combine ingredients and pour into prepared pan. Bake at 350 degrees for 50-55 minutes or until toothpick in center comes out clean. Let cool 5 minutes on wire rack, then remove from pan and finish cooling on wire rack before cutting.

Chocolate Banana Bread

2 squares BAKER'S Unsweetened Baking Chocolate
1-1/4 cups flour
1 tsp. baking soda
1/2 tsp. salt
2 eggs
3/4 cup firmly packed brown sugar
3/4 cup buttermilk
1/2 cup oil
1 fully ripe medium banana, mashed (about 1/2 cup)
2-1/2 cups POST SELECTS BANANA NUT CRUNCH Cereal, divided
1 tsp. oil

PREHEAT oven to 350°F. Place chocolate in microwavable bowl. Microwave on HIGH 1 to 2 minutes or until almost melted, stirring after 1 minute. Stir until chocolate is completely melted; cool.

MIX flour, baking soda and salt in large bowl; set aside. Beat eggs in medium bowl; stir in chocolate, sugar, buttermilk, 1/2 cup oil and the banana. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in 2 cups of the cereal. Spoon batter into greased 9x5-inch loaf pan. Crush remaining 1/2 cup cereal in small bowl. Add 1 tsp. oil; mix well. Sprinkle evenly over batter.

BAKE 50 to 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely on wire rack. Cut into 16 slices to serve.

It's soooooo good! Try it.

Most banana bread recipes are good and have the same ingredients but mine is famous in our town. I don't mean to brag. It was given to me by a friend, so I really shouldn't call it my recipe.

The only difference is mine calls for SOUR MILK and REAL BUTTER and of course lots of big chunky walnuts.

The recipe for the sour milk is simple.

Lets just say if it calls for 1 cup milk, then remove 4 tablespoons of milk and replace it with 4 tablespoons of vinegar, which will sour the milk.

You simply won't believe what a difference it makes.

Trust me and try it.

I have had this recipe for 50 years. My friends have used this method on their own recipes and they swear by it.

I would love to have your recipe. Thanks.

Thanks for the question.

Unless you've been hiding under a rock for the last couple years, I'm sure you've heard of the Paleo Diet. Read here https://tr.im/paleorecipes
I hate to even call it a diet, because it's really just the real way that humans have eaten for almost 1.9 Million years, as opposed to the modern-day processed food diet full of grains, sugars, and processed vegetable oils.

Cheryl...my recipe is close to the ones above so I won't add mine.

However....I'm going to say YES, please post yours for the stuffed shrimp! Sounds great, especially with fresh shrimp being so available here. In fact, a neighbor just a few doors down is a shrimper, so we usually buy from him. Thanks...I'll check back later.

Edit: Got it....wow, looks great...and simple! Bet it could also be done inside on a George Forman, for those who don't to do it on the outdoor grill. I'll be trying it soon...thanks again.
