Chickens. There's an estimated 24 billion chickens in the world. And they are larger than most rats and mice. Cows are about 1.2 billion only.

Insects have huge populations, but that's not to say they are the largest animal with a higher population than humans.
It may be the rat.

Just about any species of insect. A few species of birds come close but we are greatly out numbered when it comes to insect populations.
