So how do you explain a change of smell chemical reaction?
Amonia nitrate + sodium hydroxid==> ammonia hydroxide + sodium sulfate

a change of smell is the change that occurs but HOW does it happen? I need to explain it

Ammonium hydroxide is a solution of ammonia gas, NH3, in water. When it comes into existence because of NH4NO3 + NaOH, the NH3 starts coming out of solution also, and you smell it.
