When glue comes out, it's sticky, and glues everything and makes a mess. Why is it that it doesn't stick to the sides of its bottle ?

Normally, glue is a chemical that changes when it contacts some other particular chemical. For example, superglue hardens from the thin layer of water that is on most things. Many glues harden because the oxygen in the air. Some heavy duty glues (like glass epoxy) come in 2 tubes which need to be mixed at the time of use and starts to harden as a result of the mixing.
The bottom line is that the glue needs something else to harden it and in normal glues that something use is the Oxygen or Water in the air on surfaces, etc. When it is in the bottle, the glue does not contact what it needs to harden.
