I think it's cute and simple=)
"Peighton" is extremely long if you ask me, and kind of looks like "neigh" the horse sound.
Just my opinion, though.

I believe Peyton is the most common spelling for girls, and obviously Payton is fine as well, but I'd seriously avoid the confusing Peighton elaboration/feminization (whatever you intended it to be). With the popularity of Leigh -- said LEE, of course -- many unfamiliar with the name itself or simply taken aback by such an odd spelling will proceed to call her PEE-ton. Seriously, not something I'd want to do to any little girl.
For the middle name, I'd stick with something obviously feminine. Of course there are the popular fall-backs -- Peyton Rose, Grace, Faith, Marie, Nicole, Elizabeth, Claire, Noelle, Renee, etc. -- some of which work and some that sound quite off, but you could also use something less expected.
