...what would it be?
If you had the complete attention of the owner/manager and whatever suggestion you made would be implemented immediately, what would that ONE thing be???
PLEASE, foodies only....if you don't know what I mean by that, don't bother answering! :)

I want the opinions of diners that frequent upscale/fine dining restaurants regularly...

I admit that I'm a picky eater, so I always carefully tell the server exactly what I want, which usually involves leaving off sauces, cooking my fish well done, etc. etc. Then, when it gets served incorrectly, I have to sit there and wait while everyone else starts eating while they redo my plate. Many times I don't even say anything because I don't want to make a big deal about it, but when you're spending lots of money for an upscale meal, you should get what you want.

Also, in many fancy places, they don't have the server write down the orders - instead they have them memorize it. I have rarely been served the correct meal because they forgot about something I asked for.

Another thing that is frustrating is when the meal is served before you have even barely started your soup/salad course. Then you have all of these plates all over the table, and the entree is getting cold while you finish up your soup/salad.

Sorry to go on and on, but I eat out at fine restaurants several times a week, and I spend lots of money. I think that you should get what you pay for, and if the food/service isn't good, then I don't usually return. However, the restaurants with great food and great service get my repeat business, and I leave very generous tips!

For me it's the Helicopter-Waiter/Waitress that is CONSTANTLY and EXCESSIVELY at your table. The best servers are the ones that are frequently available yet not pestering or interrupting conversation. They're always available when you want or need them and not disappearing for big blocks.
THAT is service, not the fake smiles, fake voice tones, fake appreciation or the BIG smile and "THANKS GUYS/GALS" when presenting the bill.
Genuineness in every way of communication, tone, menu opinions/advice is the BEST!
That was more than "change/add" on thing, but had to add it.

Service. Courses are often rushed and the next course arrives before I've had time to finish & enjoy the previous course. I love fine dining and hate to be rushed.

The attitudes of the servers. I'd like to enjoy my meal which I already know will be good, without having to beg for another drink or flag down the server. And without the snottiness.
