Would she have to give up her title? Would I gain one? I guess all I have to do is meet her and we'll fall in love at first sight. The only problem, and I suppose it is a benefit, is that family of hers.

It is all about being there at the right time and location, and getting her attention. Princess Eugenie of York visits the US quite frequently since her mother resides between England and the states. However, you need royal connections that will introduce you to the inner royal circle. Her older sister, Princess Beatrice of York is also currently dating an American guy named David Clarke, who is the son of a wealthy American and a close friend of Prince William of Wales.
Her Royal Highness Princess Eugenie of York is allowed to continue to use her style and title whether or not she marries a commoner or a blue-blood aristocrat. She will always remain as "Princess of the blood" since she is the granddaughter of Queen Elizabeth II.
However, you and your offspring by your reunion with her will remain a commoner. Royal titles and styles are only given to the children or grandchildren in the male line of a monarch. HRH Princess Eugenie of York is currently 6th in line to the British throne, and her offspring will be in the line of succession accordingly.
A monarch do have the authority and power to honor a title to a commoner husband of a princess, however, since Princess Eugenie of York is only a granddaughter of a monarch, and her father Prince Andrew of York is only the second son of Queen Elizabeth II who is not designated to be King, there is fairly very minimal chances that her husband will be given a title.

She could keep her title, and you wouldn't get one.

Go meet Eugenie and hit on her and hope you're what she's into. Good luck with that.

You don't. I'm SURE her family has someone of Royal lineage waiting in the wings for her... or at least a Duke or Baron or someone with a TITLE.. However, since she is no where NEAR the top of the heap to be in line to be Queen, you COULD have a SNOW BALLS CHANCE if you LIVED IN ENGLAND and hung around the castle a bit WITHOUT getting arrested...
