everytime I check the stock market (e.g. DOW), i notice that it doesnt begin where it ends the day before, why is that??

In addition to the pre and post market trading, a lot of professional trading platforms allow you to still place orders or delete them outside of any trading hours. So if news comes out, those traders can change where the opening bid/ask is and the stock can gap.

After-market and pre-market trading.

After the bell at 4pm traders still trade in after-market action. In the morning traders trade before the start. When the market begins it picks up where premarket trading left off but the chart only records at the start time, thus showing a gap in the day before value.
