Don't look at me, the jocks and the emos were the ones who started it.
;P
More seriously, I think it's partly because stereotypes do actually work fairly well sometimes, and more interestingly, because there is a positive feedback mechanism. People are stereotyped, but then they also want to fit in with everyone else, so what they end up doing is trying to fit in with a certain stereotype (whichever one suits them best), which reinforces the stereotype's accuracy. And the ironic thing is, a little while later they all start complaining about how they're being stereotyped. o.O

People have always stereotyped. If we're stereotyping more these days, I'd say it probably has a lot to do with what we see and hear. A lot of comedians are touching on the race thing and I've heard many even poke fun at their own race and the stereotypes associated with that race. That's okay for THEM to say, but others pick up on those stereotypes and think it's funny when THEY say it.
Other people stereotype simply because they're ignorant. They've heard that a certain ethnic group does a certain thing and they think (in their tiny pea brains) that EVERYONE in that group is the exact same way.

"we" have always stereotyped. Maybe your just getting older and recognizing it more. When we're younger we don't pick up on it as much because we don't know any better. Most of it is learned from family, friends, media so we don't know different until we get older and hear about the hype and then is when we start noticing ourselves and others doing what we didn't even notice before.

Stereo-typing is nothing new. It has been going on for ages. I choose to believe that we are slowly moving beyond that. I see less and less of it, in the people I meet.
Maybe it's the company you keep that is making it seem like people do it so much? Always a great opportunity to help open their eyes.

Actually we stereotype less these days. Check out older books, magazines and newspapers. BTW older is measured in decades and centuries not years.
