Those animals have evolved to be able to go periods without drinking.

We have not.

You'd be eating a lot of plants to be able to get all the liquid you need.

Can you survive yes. For how long under what climate conditions plays a factor. I am also thinking of really wet fruit, watermelon, grapes, peaches and so forth. Down side is the other end, our bodies are not adjusted to taking in liquid in that way and well our body will pass it that way so would be counter productive.

Eat a case of grapes in one day you will understand the draw back.

humans could survive doing this - they have in dessert areas, but they don't thrive, they just get by. It's a survival trick, in fact that if you're lost in the woods you can wrap a bag around the leafy end of a tree branch overnight and capture water that way...

Currently I don't think so. Remember it took thousands of years for thoese animals to develop/evolve that ability.
