when ppl say they wear a septum ring "flipped up" what does that mean??

People often wear retainers in septum piercings which are shaped like a staple with long legs like so I_I You can also use circular barbells (the things shaped like a horseshoe with screw on balls)

Both of these leave a gap so that you can turn the jewlery up to hide the ends in your nose. This essentially hides your jewlery and youll be able to get away with it at work as well as around people who dont know what a septum ring looks like when its hiding. If someone gives your nose a good inspection from the side it will still show a glint of metal, but hey its more discreet than a big floppy ring.

when it's 'flipped up' - generally a u-shaped bar (where the ends generally are visible, eg http://www.bmezine.com/pierce/03-nose/A70926/high/bmepb616978.jpg) is literally flipped up so the ends can't be seen
