Any will work, just a matter of personal taste, I normally go .com then .co.uk, then .net

sure, you could use .me.uk if you like, but you may find these domains are more expensive. There's also .name domains, but again, these are pricey. .info and .net domains are often on sale cheaper. GoDaddy seems always to have .info domains on special offer.
I would steer away from .com and .co.uk as these are for business - unless you want to be able to use it for that at some point. and .org (and .org.uk) are meant for non-profits like charities and so on.

Commercial for the United Kingdom, Commercial International, Organsation International, Network related International, European.
.me.uk is appropriate for Personal websites from the UK.

.com is international sites
.org is orginisitians or companys
and eu is euroipean sites
