I do mainly video editing/photoshop etc but hardly any gaming.

I don't want to do any overclocking and I was looking at these packages. One is a 6600 and the other is 6850:

I've read reviews and comparisons all over the internet and they they only seem to take into account that you spend all of your time gaming and you want to overclock them.

I think i'm stuck between weather i should go for the dual core or quad core.

What would you recommend? Will one need more cooling than the other? Which will run faster out of the box for Sony Vegas, photoshop and flash?

I'm upgrading from a Pentium 4 2.6GHz with 1GB RAM. Will i see much of an improvement?

I'll be using the new setup to go to Uni with so I won't want to be doing any more upgrading for around 3 years!

If you will not overclock, E6850 should be great. Check benchmarks on Photoshop and MS Moviemaker below:

E6850 is just a 65 watter while Q6600 draws up to 95 watts.

I recommend 6850.
