Just how much detail can be seen when looking at the moon from earth based telescopes or from Hubble?

The resolution of the Hubble is in the neighborhood of 100 meters at the distance of the Moon. That means is should be able to separate two objects 100 meters apart. It can probably detect somewhat smaller individual objects if the contrast is high enough.
