How is a single color ink cartridge able to produce every color?

Because it has 3 separate ink tanks inside.

It can't. You need at least 3 primary colours (for ink they are cyan, magenta and yellow) with black ink being helpful (so that you don't waste expensive colour ink on black text and also to bring out the dark colours better).

Most colour ink cartridges though contain three colours (or even four if they have black in them).
