My tenant is a military doctor renting our apartment and has been great. We don't have a lot of money but any suggestions on something little I can give him? Should I just give him some food (my mom is Korean so I was thinking of giving him some Korean food during the Christmas holidays) - I don't want to give him fruit cake or anything.

If he is there without family and won't be able to go home for Christmas, you could invite him to share Christmas dinner with your family. A small jar of homemade jelly, cookies, or candy would be very appreciated I'm sure. If his family is with him or he will be going home for the holidays, maybe a small picture frame (to display a picture of someone special) or a "gift certificate" for a service he would appreciate. Things like a car wash, errand service, or anything that would show him your appreciation would be nice.

I bet he would appreciate a discount on the rent more than anything.

Realistically speaking though, I think he would appreciate a nice home-cooked meal or a dessert.

what if he dont like that kind of food? how about friendship candles? he can use them for candles or decorations. if you wanna give him food buy him a gift card at his fav. restraunt. & put it inside his card. their not that costly.
