Fleetwood Mac {Stevie Nicks and Christine McVie}
Heart {Ann Wilson}
Jefferson Airplane {Grace Slick}
There used to be the all-female punk-rock band
Girlschool {they worked with Motorhead a few times}
That's all I can think of, as most of the music in my 'Rock' collection is by bands with male singers!

The Gossip are a relatively new band, featuring singer Beth Ditto. They have a great song "Standing In The Way Of Control".
Aussie band Baby Animals have just reformed - they feature singer Suze DeMarchi (married to former Extreme guitarist Nuno Bettencourt), and there was also Superjesus out of Australia. Singer Sarah MacLeod is now solo, and is releasing a new album early next year.

Ambeon, a project by Arjen Anthony Lucassen, featuring vocalist Astrid van der Veen. They only did one album, called "Fate of A Dreamer". I highly recommend it.
