First bake the potato

cut a small hole in the top of the potato, then carefully scoop out the inside with out damaging the skin

then mash the potato insides with butter, milk, nutmeg, and a little salt.

Then stuff the mashed potato back in the skin, top it with your favorite cheese and bake again until the cheese melts.

I hate potatoes in general but I like this recipe a friend makes:
cut the potatoes in slices and cover the bottom of a buttered roasting pan. over it put some chopped bacon and some trimmed smoked cheese...then continue until you fill the whole pan...bake in very hot preheated oven for about an hour...
my friend also puts mushrooms and garlic and sometimes scrambled eggs...it's lovely...

White potatoes, sweet potatoes, onions, green peppers and mushrooms fried; seasoned with sweet basil, garlic and salt. Not just a side dish but a whole meal.

I like them peeled and sliced, then thrown into a cast iron skillet that has hot bacon drippings waiting. Fry them until golden brown on one side, then turn them over, place a lid on top, lower the temp, and let them cook for 20 minutes.
