Tell them that with the rate that students are going these days, what you plan on doing will eventually benefit them. Canned food doesn't go bad for like a decade, and someday they may be the ones cashing in, so its good to participate now!
Acutally, what you could do is just post flyers around school, if permitted, you may be suprised that some students who don' have anything to do will participate.

I am in college and my professor gives us 1 point a can up to cans.
Start a contest for the kid that brings the most to get 2 movie tickets or a gift card to Hollister

we currently have one going on and they had several companies in the area donate stuff for prizes. IE: a bmx bike, laptop, gift certificates etc.
