A Buffet is a way of serving or presenting food to one's guests or the general public i.e. We held a buffet for our son's graduation (or) Let's go to dinner at the hotel they are serving a buffet tonight. It is a variety of foods presented all at once for you to choose from, usually as much as you want.
A Gourmet on the other hand describes the type of presentation or describes a type of chef. He is a Gourmet Chef (or) We had a Gourmet Dinner tonight. It mean's very good or very special or very selective.

I'm not sure if I should be expecting a punchline or if this is a serious question... A buffet is basically dishs of food that you select for yourself, meaning you get up from your table and walk to the buffet and server yourself. They come in many varieties from "all you can eat" to a "salad bar".
Gourmet is just a word used to refer to good food or drink. There is no reason the food on a buffet cannot be gourmet.

Gourmet describes a type of food..perhaps even a one of a kind specialty.
Buffet describes the amount of food...all you can eat of different types of food.
You can almost say Gourmet is singular and Buffet is plural
