Owning an xbox and not being the biggest fan of shooters I understand it can be hard to find Xbox gems that don't involve shooting. Here's the ones I've found and enjoyed;
+Fable-A great RPG, definatly worth your time although it is a bit short.
+Blinx: The Time sweeper-a kid game sorta...but not bad
+The Elder Scrolls III: Morrowind-another great RPG
+Fatal Frame II: Directors Cut-awesome survival horror in time for halloween, just hard to find..
+Ninja Gaiden/Ninja Gaiden Black-one ninja you can't go wrong with.
+Panzer Dragoon Orta-short, but good
+Star Wars Knights of the Old republic-game of the year for a reason
Others:
+Jade Empire
+Otogi
If you want to check any others, gametrailers, gamefaqs.com and ign.com are great sources.

Fable isn't bad and to try if you haven't played any RPG's before. And for racing and building a ride like you want it i would suggest midnight club 3 dub edtion. Midnight club 3 can be taken online for some fun but not just racing many of the user rooms where made for carshows and such.
