Because of stereotypes. This may sound awful but Hispanic men are known for being controlling in their culture, so my parents told me they would rather me be gay than marry a Hispanic person. They had no problem with any other race(or Hispanic people, they just thought I deserved better than getting beat and being a baby factory) and were open minded to being gay(my brother came out at 17). So I think sometimes people are just scared of stereotypes, that doesn't necessarily make them racist. Stereotypes usually have SOME truth to them. White people usually can't dance, Black guys usually have big d**ks, Mexican families are usually large, Asians usually get good grades.

ignorance, hate, come to mind. I know a couple of people who won't date outside their race because they are afraid at home other people will look at them or because their family would disown them. Stupidity at its finest.
