There is more than one sky. It is difficult to define precisely for several reasons, which I'll try to explain (briefly).
The blue sky you see during the day is a result of diffusion & sky radiation which the eye perceives a light blue in color. On a sunny day the Earth's sky usually takes on a blue gradient — dark in the zenith, light near the horizon (due to Rayleigh scattering). It can turn a multitude of colors such as purple, red & orange (especially near sunset and sunrise) and black at night. Scattering effects also partially polarize light from the sky.
So, besides the blue skies, we have the night skies, cloudy skies, stormy skies, (do I need to go on? Nah, I think U get my point!)

when we say skies it usually means that the sky is. ex:/ The skies the limit-or-The sky is the limit.

There are seven of them. It depends on where you are and what angle you are looking at.Geographers say that there are seven of them.Biblically, that is also correct.see the Holy Book where skies and firmament are mentioned.
