After thousands of gallons of grout and with NO OFFENSE taxi... you have that in reverse. Sanded is a valid and prescribed choice up to 1/2 inch. UN sanded beyond that.
Obvious that number 1 has stated the direct answer; Sand included or not. The textures when dry will be slightly different; as will the resistance to moisture.
The bag of grout itself; pretty clearly states intent; etc.

Grout by itself would usually consists of a mixture of ordinary portland cement and colour pigments packed in powdered form. When mixed with the recommended ratio with clean water or diluted latex emulsion, the resultant mixture of putty shall be the 'grout'.
The difference between sanded and unsanded grout basically means the grout mixture includes sand or not. The fine granular sand serves to reinforce the grout density and provides a different texture of finishing to the grout surfaces.

Sanded grout is grainier. It all depends on the look you're going for. If I were using grout on a glass mosaic I'd use unsanded grout. I think sanded grout would take away from the beauty of the stained glass.

unsanded grout is used for grout lines less than 1/8" in width (such as you find in showers), sanded for anything wider (floors). There's no real "difference" between the two other than the sanded grout being more stable for the wider joints and is less prone to cracking. The sanded grout doesn't fit well in the smaller joints and can leave air pockets which will weaken the grout joint.

Sanded grout is usually used on floor tiles, and unsanded grout is for wall tiles. I would think unsanded is what you want for glass.

Unsanded grout is not gritty, I think the grit will scratch the more shiny surfaces such as italian marble.
