My sister in law makes this spinach salad with bacon and walnuts and she saute some apples in the bacon grease and makes this dressing and it has a few red onions in it, oh the tastes that mingle together are just awesome Hold on let me see if I have the recipe well here you go!
Warm Spinach Apple Salad
¼ cup walnuts toasted
4 slices crisply cooked bacon crumbled
½ cup sliced onion
2 golden delicious apples peeled cored and cut in wedges
¼ cup red wine vinegar
2 tsp. packed brown sugar
½ tsp. salt
1 pkg. (10 oz.) fresh baby spinach
¼ cup crumbled blue cheese
Heat a small skillet, add nuts stirring frequently until toasted, your nose will know when they are done, they smell wonderful)! Set the nuts aside. Cook the bacon in the skillet over medium heat; drain. Reserve 2 Tbsp. of the bacon drippings. Cook onion in bacon drippings about two minutes, add apples, vinegar, sugar, and salt. Cook 2-3 minutes or until onion is tender place spinach in a large bowl. Pour apples over top. Toss well. Top with blue cheese and toasted walnuts. Serve IMMEDIATELY!
When I worked there was another one called 7 layer overnight salad that was big here in Utah that has the lettuce on the bottom and then a layer of carrots and then celery, then a layer of something else and more layers , red onions bacon, mayonnaise or salad dressing or blue cheese whatever you want and then you let it set over night it is in a deep glass bowl so you can see all the pretty layers and before you serve you toss it. It is cute a good! Another good Mormon dish.
Cobb salad is sooo good I like it when they put the baby corn in it!
