They don't. The NHL changed it during the 2003-04 season to make dark uniforms the home ones because many teams starting to wear alternate jerseys at home and so as to not make teams travel with their white and dark uniforms to away games the NHL changed it back to dark uniform being the home uniforms which I like a lot better. It was that way before the 1970-71 season so in a sense the NHL went back to the traditionally way of color home and white away.

Traditionally the home team wore dark uniforms, then they switched to have the home team wear white (what most of us grew up with). In the 03 04 season, the league switched back to the wear dark at home because so many teams had alternative jerseys, which were always dark.
This made it easier on the traveling teams because they only had to carry white jerseys, so instead of two sets of jerseys, a player (team) would only have to worry about one set.
Plus "road" or dark uniforms sell better, that is why the nfl has always worn dark uniforms at home.

Dark at home, white on the road. Usually, once or twice in a season a team *will* wear their road (white) uni's at home. Sometimes because a visiting squad will request it so they can wear their alternate uni's, but mostly just for marketing purposes.

for the most part, they don't
only on rare occasions (like the away team only has their home jerseys or something)
OR - A few years ago, they switched the dark jerseys to being the home ones, maybe you missed that

Because the dark jerseys are WAY better. The white ones are ugly for ALL teams. So they rather look ugly away then look ugly at home.lol.

Just to add on, it has become a source of pride to wear your "colors" at home.... "This is OUR HOUSE!!!" Same thing in football.
