Liver and gizzard. It is sometimes used for stuffing. Some cooks use the gizzard for soups and to flavor stocks. Turkey liver could be used for any recipe calling for any kind of liver. Mashed liver could also be added to stews and pot roasts in the last 15 minutes of cooking time, to thicken and flavor the gravy.

Liver and gizzards Hun! My Mom was always exceptionally clean and one year for Thanksgiving she said she looked and looked for the bag and couldn't find it, so she said she guess they left it out. Well much to our Surprise and her horrible Embarrasment when we cut the Turkey one of my Brothers found it and Mom was red and so embarassed. We all laughed and thought it was so funny for Ms. Clean to do this. She's never forgiven herself to this day. We still kid her about it.Gibblets is the same thing I just said.You can make Gravy out of it.
