Taronga Zoo is a great way to spend a day.

You could also do the Powerhouse Museum in a day.

Otherwise you could combine a trip down to The Rocks to view the Harbour Bridge and Opera House with a walk back into the city and up Centrepoint Tower. Perhaps even grab a ticket and do the Harbour bridge walk???

Hope this is of some help.
Cheers :)

Also The Rocks area is great on Sydney Harbour, you can sit and enjoy a coffee or maybe even take a Ferry ride across to Manly
