Everything you can. Business Management, accounting, finance, real estate, marketing, and advertising will help you run your business. Art classes, drawing, graphic design will help you with the actual tattooing. Computer classes will help you be familiar with software applications you can use for business, creativity, and other things. Communications to learn how to deal with people in a professional manner. Basic medical and safety training. Learning CPR, First Aid and the like will be very important for licensing. Also, required issues of sanitation and cleaning will be important for your instruments. Mechanical design will help if things break. The list goes on and on.

Art, business courses, marketing classes at the very least. Some accounting will help immensly. But you'll definately need to be able to do the artwork or you won't get any business.
