Pot pies [popeyes] haha
To stretch popeyes, I put cooked rice in a bowl and smoosh a cooked popeye on top. Tasty, and the pie is lots more like a meal.

Something I like to call "Refrigerator Stew".
I cook for a family of seven every day. There is always some sort of leftovers going. Usually by Thursday, when I no longer feel like cooking, and I STILL have to feed seven people, I will just gather up all of the leftovers from the other meals, throw them all in a pot on low, add a can of whatever soup seems appropriate (cream of mushroom, or tomatoe or vegetable being just examples) and let it simmer. I like to season well with spices as well. Then I will serve this over mashed potatoes or pasta or toasted bread slices with salad on the side.
There are a lot of things that have gone into that pot. Most of them have made wonderful tasty meals.

back in the late 60's the stretch meal at my house was What my Mother called Sh_ _ on a Shingle. Why she called it that I don't know, maybe because my dad was a house builder. What it was, was toast with a cream sauce and chipped beef. It went along way because you ate mostly bread! It's funny to think back about that!

Slumgullian.
From scratch. Hate those packaged "helper" thingies......
Wonderful mixture of ground beef, onions, lots of garlic, lots of oregano, cumin, a little chili powder, salt, dried red pepper flakes, salt and pepper......then a large can of tomato sauce and a coupla cups of cooked macaroni. Cook it low for 1/2 hour or so and ..........YUMMY.
If you want to stretch it, add more macaroni!
If you want to fancy it up, after cooking it, pour it into a shallow baking dish, top with a good cheddar, montery or other favorite cheese, throw it into a 350 oven til the cheese melts and gets all bubbly......

I love to roast a whole chicken in the crock pot until falling apart tender. I use plenty of herbs and seasonings. I serve it with potatos and other veggies. The second day I like to use it for chicken sandwiches, and if there is any left the third day, I like to use it in a nice fresh garden salad. It's a very healthy, flavorful, and money saving meal.

Well I only have to feed myself now, thank the Lord. I would hate to have to try and feed a family now. I find myself eating a lot of grilled cheese sandwiches, hamburger, fixed various ways and roast. I can get a roast on sale now and then. I fix all the potatoes and stuff to go with it then have the leftovers for days. I use the rest of it for hash or sandwiches. I can eat for a week or so on a roast. I eat a lot of oatmeal. It's cheap and filling.

Left-over stew. I keep prepared broth in my pantry; chicken, beef, turkey, and vegetable. Saute some onion and garlic in a bit of olive oil if I have them, skip them if I don't. I pour the broth in the same pot with the onions, add either rice or pasta, boil for 10 minutes. Then toss any left over meat and veggies I have on hand...simmer for thirty minutes....and then pretend I slaved all day....

One that I could satisfy the kids with when they were all home was a hamburger casserole. It had ground beef, pasta, pork&beans, onion, bell pepper and tomatoe soup in it. Then you topped it with cheddar cheese and baked it for a bit. You could always stretch it by adding extra meat, pasta or beans without without effecting the flavor. The boys all loved it and asked for it often.

A pot of stew can be made with some leftovers. That would be one food stretcher.
Depending on the amount of stew, you can eat on it a couple of days and put some up in the freezer for another meal.
Red beans is also one of our favorites with fried potatoes, onion and corn bread.
Casseroles usually go a long way.
