The zoo is great. I lived in San Diego for 7 years and Omaha's zoo is better than San Diego's Zoo or the Wild Animal Park. If you were going to take her one place, I would go to the zoo.
There's a great trail system if you are in to biking, running, or rollerblading. Shopping - Shadow Lake Towne Center (Papillion), Village Pointe (West Omaha), the new Cabella's (LaVista - for the outdoors-person), Oakview Mall or Westroads Mall. Casinos in Council Bluffs, Iowa (10 minutes away).
Plenty of museums (SAC museum, Joslyn Art museum, etc), local sporting events, musicals, plays, and shows. Lots of movie theaters, clubs, bars, restaurants (no smoking indoors in Omaha city limits). Downtown is nice (Old Market, Heartland of America Park), plenty of golf courses and parks throughout the city. Fontenelle Forest in Bellevue is also a nice place to go get some fresh air if the weather is nice.
There's also been a good number of concerts coming through lately. Check out the schedule at the Qwest Center.

I was there some years back they have a historic district with some restaurants and micro breweries ... nice place.
Also the area by the Quest Center is really nice.
Overall a very nice city. Was there for only 6 hours But I will go back one day
