Can anyone give me any advice regarding whether it is crazy to contemplate travelling through Europe and the UK during Jan-Feb? Will it be too cold to appreciate the trip, or is it a good idea to avoid crowds? My leave was meant to be later but now my boss is being 'difficult' and I may have to make the trip earlier.

Take the time if you can, your boss might change his mind again and make it even harder to get away at any time.

The south of the UK and the much of Europe will be around freezing, more likely just above but can be below too.
(Netherlands, Belgium, Nothern Germany, France exept near / in the mountains.)
The south (Italy, Spain, Greece all exept the mountain areas) will be warmer, say between 5 and 15 C, which is warm enough for a light coat and sweater, with just the odd day for just a T-shirt when it is sunny.)

But a good winter coat and gloves will do the job in most of Europe.
Just expect to do indoor entertainment more than you might in summer.
But your changes for rain are about the same as they would be in Summer.

If you like winter, you might like to include a week or so of winter sports, the Alps will be perfect for that.

In winter you will find that many of the hostels and small hotels in the smaller towns will be closed and the museums and castles will only be open in the weekend or not at all, so winter is the time to go to the bigger towns.
A town like Amsterdam is nearly as busy in January as it is in June, crowded enough to be nice but not overcrowded as it can be in July and August.

If you like sun, in the south of Spain and Italy, and mainland Greece, many towns will be open for those seeking winter sun, but outside the school holidays many of the visitors will be pensioners.

Expect to meet the people who travel because they like it, not those who travel because it is expected of them, I think it is easier to find others to do things with, even when there are fewer people around.
Hostels in the bigger towns are the best places to avoid getting lonely.

I would not recommend Jan-Feb, it´s rather cold and chilly at that time of the year. Why not try the Canary Islands, should be warm there at that time. Have a nice holiday!
