The two front runners are definitely the Harry Potter series and the Lord of the Rings trilogy. Both were amazingly well done.
The upcoming "Golden Compass" also looks incredibly good. I bought and red the books based almost entirely on the movie previews.
But there have also been a lot of movies that aren't quite so obvious -- such as some of the John Grisham movies. These were also very well done adaptations from the books. But because they weren't such huge special effects films, we don't get the same "Oh, wow!" feeling from them.

I'd say 'To Kill A Mockingbird'. There were of course things in the book that didn't make it into the film - impossible to do unless you're making a mini series - but I think the film came closer than just about any other that I've seen in capturing the story and spirit of the book. They also had great casting - Gregory Peck was the perfect Atticus Finch.

Lord of the Rings, most certainly. I've been reading Tolkien long before the movie was conceived. Amazingly, the movie trilogy came out just the way I imagined it would.
