My Brother-in-law is Black. He's been in quite a few places and lived in many places. He's felt safe and well-received in some, and quite the opposite. He really likes Utah and hopes to move here in the near future.
I've known some black people to comment that people in Utah are almost too nice. As if they go out of their way to be friendly to someone who's black because they don't want to be perceived as racist.
There's a healthy population of Latinos as well. Keep in mind that many of the men, and a fair number of the women, have served LDS missions in nearly every part of the world or country. They've been inside of people's homes that were black, indian, korean, gay, handicapt, old, etc.
I'm not saying that you won't meet people who are sheltered or racist, however I'd be surprised if you didn't like it here because of your race.

In the 80's when I lived there, there was the tonguns (hawians) who had migrated from hawii from being mormonsized, there was hispanics (now the gangs) and some blacks, but UT is still mainly not a black state, there are a few Asians, but mainly Hispanics and whites.
There are other churches there now besides the mormon chruch, PTL.
There is great fishing, hiking, skiing, an outsider can do genelogy there, you can go see the IMAX theaters, the planetarium (I was there twice recently) ride the trolley, go to the five malls, Lagoon (an amusement park is open in the spring and summertime) The great salt lake is still open to swim in for people who like to float in, The coppermind is open for tours, the "U" has a Museum. You might even want to see temple square, people can even go in the church office building and ride the elevator, the fastest elevator I have ever been on, the only thing you have to bare is the tour guide and her trying to preach the gospel to you, after the ride, you get to the top and you can see the whole SLC, valley and take pictures.
There is also a great gym I enjoyed in W.V.C UT, it had a climbing wall, an indoor running track, indoor swiiming pool, jaquizi, indoor waterslide, wade pool, weight area and lots more.
During christmastime, you can enjoy the christmas lights on temple square (i am ex-mormon by the way)

I live a couple of hours from Salt Lake and it is a pretty nice place to live. It has a lot to do there, but there a lot of mormons which is good kind of because there doesn't seem to be as much crime. Plus it is only about 30 minutes from Park City, UT and omg it is beautiful and very ritzy

There are so many Samoans, they have their own wards. There are so many Tongans, they have their own STAKE.
However, sometimes (I can't speak for SLC, only for Ogden wehre I lived) some people don't take kindly to blacks, Mexicans and Indians. I was told to avoid certain areas of town when looking for a house, because of "blacks, Mexicans and Indians". I would have moved there, just to spite these spiteful cats, if I thought it wouldn't be next to impossible for my husband to get to work.
