Im looking to race so the faster the engine the better

the sky is the limit, and you have been given some good idea's already.
but i think you need more info then you have been given so far.
one a big block is one choice, but i wouldn't do that.
there's an old saying there's no replacement for displacement, and there one more more weight more horse power needed to make it go, just fact, and big blocks weigh in at 160lbs more then small blocks.

world/motown hardcore engine, they have a package set up in a small block forum with big displacements starting with 383CID, 415CID,427CID, 454CID and the big one 502CID all out of a small block.

but if the big block is the way you want to good and they do look good setting in there, again world/motown hardcore has all the way up to a 632CID with 1000HP with out a blower or NOS.

Stroker! I'd stay with a small block, big block's have gob's of torque, but can twist a 'vette frame! 383 stroker's a good answer. Aftermarket heads, that have 180cc runner's, to hit those 7500 rpm's constantly. This is for Super-Modified, Drag should hit 9 to10 grand. The Pro's are going for ReverseDish head piston's, better burn, with small combustion chambers. There's just too much to list here, but a few tips:
1.Oil: Longevity of an engine demands an extremely good oil system, fortunately Chevy's have always sttod out in this aspect! High pressure! High volume, high pressure oil pumps, will suck all the oil out of your pan, and put it on top. Results? Boom! Be sure you have a adequate oil pan, like 6 quarts.
2. Breathing: Engines got to breathe! Flowed heads, unrestricted exhaust, single plane intake manifolds. You'll be keeping your rev's at 4000-up, no need for the street dual plane intake.
3.Cam: Has to match your compression, breathing. Valve lift, duration, can make, or break you.
4.Fuel system: Injections coming around for racing, expensive, though!
None of this is for racing on the street. It's illegal! Could get you killed, and other people!

Buy from a professional engine builder if you want maximum horsepower and torque.
The question is which engine is faster? They can all be fast and with a dose of nitrous you can make them real fast for a few seconds before it "grenades". But will the engine be fast in the car you put it in?

If you build an engine or buy a crate engine to install in your Vette then you have to build the rest of the car to match the engine. The transmission, gear package, suspension, driveshaft and axles etc. all have to be built to stand up to the horsepower and put it to the ground with minimal tire spin.
The Vette is a deceivingly heavy chassis. GM Performance Parts division makes 383 Small Block stroker engines that are pumpin' up to 600+ Hp out of the box. They have the torque of any big block. I think you can even get a 410 CID stroker but like always horsepower costs big bucks. If you do something like this please keep it off the highway, I wouldn't want to read about you in the obituary

As far as running the 327 against the 350, enjoy the way the 327 works and don't worry about depreciating the price. Why are you buying the car, for the enjoyment of it or to try and make a buck when you see it? Answer that question and you will know what to do yourself. Most cars will not get more money back if you sell them later as the time and money spent to upgrade or bring them back to original will not amount to the same as you will get when selling. Love your car for how it drives and feels, not how much it's worth. Good luck.

A good crate motor like the 383 small block puts out 425 HP....nitrous system could add a couple hundred more or go with a crate big block like the 572 at 720 HP All it takes is money.

you can go with a modified 350 ,basically it would be a 383 stroker engine,or a 454 would also fit in it,there's really no limit to what you could do with it,they run just fine with a good powerful 350 as anything else,its up to you though,good luck with it.

take baby steps and experiment. just don't do what I did. I had the bright idea to stick a huge buick GNX motor in my ford falcon.$5000 later I got the motor to fit. I made it 7 miles and I hit the gas as hard as I could and the torque from the motor just about ripped my light little falcon in half.

You could put just about any motor in it. The fastest would probably be a top fuel blower motor, but I would probably stick with a 421 small block.
