Also how to prevent the out of stock getting sold? thanks

Could be anything from no consequences, to their bringing back the item (eg sour milk, stale potato chips), to serious lawsuits if somebody was poisoned or something like that.

For items that are code dated, someone should be assigned to check to be sure that out of date items are pulled. Stockers must be trained to rotate properly so the older items are to the front, more easily accessible to customers.

Out of date refers to the date it must be sold by. It does not necessarily mean the product is bad.

When I was in College, my roommate's dad worked for a cheese distributor. We lived on out of date cheese!

But we didn't pay for the cheese. The consequence for the consumer is they are probably paying too much for old product.
