San Antonio is the hub of South Texas and a great plcae to start a weekend from.
You have been to Houston, but probably not been to many of the entertainment events available there, also there is some excellent shopping in Houston (though not much you can't get in San Antonio). Galveston (just 45 mi south of Houston) is a great place to spend a weekend. If you want a romantic special weekend for your girlfriend, I would suggest the Hotel Galvez, or the Tremont Hotel (both 4-star historic hotels owned by Wyndam Hotels) or one of the bed and breakfasts in the area. A travel agent can often get you a good rate if you give them advanced notice. I use this agency: www.greatratestravelservice.com. While in Galveston go to Moody Gardens, they have an indoor rainforest, and aquarium, and a discovery pyramid as well as Schlitterbahn has built a year-round all weather indoor/outdoor waterpark on the Moody Gardens grounds. This is of course off season, but in December they will have a festival called Dickens on the Strand, in February they will have a Mardi Gras celebration and many more celebrations. I spent last weekend there and had a great time. If you go have dinner at Gaido's but go early or expect a long wait.
Between Houston and Galveston is Kemah and the Kemah Boardwalk is a wonderful place to go for nice weekend. I can't recommend a hotel in that area as I always stay on a boat while there.
Go South... south of the border. Mexico is just a short drive and makes a great day trip or you can go and stay in Laredo and make a weekend out of it. See the shops, a show, eat some food and have a great time in Nueva Laredo.
Bandera to the west has many fun events and can be entertaining with antiques and small shops. We have made several day trips to that area. There are also events in many of the towns and areas to the west of San Antonio. The Cajun Festival on Lake Medina and many other festivals can keep you busy most weekends.
As you have already been told. The many towns north of San Antonio in the hill country can keep you busy just seeing the shops and eating, there are many bed and breakfasts throughout the hill country. One of my favorite weekend activities is the driving to the wineries and visiting the tasting rooms, stopping and having lunch, seeing the sites of the hill country along the way. You can stay in a hotel, bed and breakfast, or we have camped up at Perdernales Falls State Park and visited the wineries from there. Of course in the late spring through the summer you have tubing on the rivers in the hill country. But you can always go up to the Canyon Lake Marina and rent a boat or jet skis on a weekend if it is a nice day. I have taken my ski boat out on Christmas day once in the past, and been sailing many times in my sailboat in January.
Not much over an hour north is Austin. Austin is the"Live Music Capital of Texas" it is a great place to go on the weekends. Go to 6th Street and to many of the area clubs and venues. If you are going to spend the weekend stay near the Lakes in downtown, the area is great.
Also in Austin:The Texas Capitol Building, Mount Bonnell, Barton Springs, Zilker Park, Bob Bullock State History Museum, Austin Museum of Art, The shops on Congress Street, The Laguna Gloria Art Complex, Texas Governors Mansion (now closed due to renovations), UT Campus and UT Tower (free to visitors), Town Lake (Now Lady Bird Lake), The Dillo (Trolley cars that take you through downtown), The LBJ Library and Museum, Austin City Store.
For longer trips you have Dallas and Fort Worth but they are whole answers of their own.
If you want to stay busy, get the friday Express News and read the Weekender. You will find all the events in the area and can come up with ideas. Also this site www.traveltex.com has many events listed and can keep you busy.

EDIT: Note for ffperki--- the Flagship Hotel in Galveston has been sold and will be refurbished. The new owner (the owner of the Saltgrass restaurants among other things) is also adding an entertainment area to the pier including a Ferris Wheel so look for new things in the future.

Canyon Lake is less than an hour drive north of there. You can rent jet skis and boats in the summer, tan, you name it. Tubing down the river an option. Schliterbaun (however you spell it) in New Braunfels...again summer but they have activities and festivals all winter too. There is always Austin, San Marcos and the outlet malls, Boerne is pretty...and really, Dallas/Ft. Worth is a decent weekend trip. It's about a 4 1/2 hour drive. It depends on what you are both into.
Shiner, Texas isn't too far either. They have a 'Bock'tober fest this time of year and the brewery is always good for a tour.
Give travel Texas sites a try and even a map site for some of these directions. Good luck!

You are located in the perfect location to take advantage of the many things and places in Texas. There is "Hill Country", Austin, Houston, and any points/cities South. Corpus not only has a great aquarium and some nice beaches, but there is the Texas Treasures gambling ship out of Port Aransas, the evening cruises are a must, upgrade your ticket to take advantage of a truly fine dining experience, plus the free moonlight, stars and ocean. Lots to see in the Rio Grande Valley, plus Mexico is a short hop. Being new to Texas, you will need a bit of time to locate things of interest, but there is something for everyone. Take your gf for a day of shopping at the GREAT outlet malls just outside of San Antonio, if you enjoy Mexican food, then no where except Mexico can compete. Summers and Fall offer numerous Fairs and Festivals, Sports teams abound, fishing, hunting, etc are some of the best in the country. Keep looking and exploring, there is something for everyone in Texas!

Austin, TX has so many things to do. It's about 1 hour north east of San Antonio. It is a beautiful city with parks and lots of places to visit.
Minor Correction to US_DR_JD: The Austin City store has closed as of September 2007.
But that's nothing there is SO MANY THINGS to do there.

Garner Park near Leakey, Concan TX. depending where you are taken off from is (from my house) about 80 miles but it might as well be 800 miles it feels like you are a real long way from San Antonio, boating, fishing, camping, photo taken lots of birds, and wild game, like deer, turkey, bobcat, wild goats, hiking trails, this is not a high dollar week end but it is a lot of fun. You are not very far from Uvalde from the park, it makes it convenient to go up there for a dinner, movie or for anything that you have forgotten to bring with you.
I also like going to Galveston this is only 45 miles from Houston, and yet the are like two worlds apart. When we go we like to stay at the Flag Ship Hotel. We like the museums, we also like to eat on board ship that is docked there and has been turned into a really good place to eat. Bicycles are available to rent. There is also Moody Garden a wonderful place to spend some time. In the evening it is really nice to catch a horse drawn carriage and go for ride around the city very romantic.
That is two and very different from one another but both are a lot of fun.

Take her up to Fredricksburg they have good shopping. "Women be shoppin. You can't stop a women from shoppin". Austin is always fun b/c of live music and 6th street and indie film festivals. If y'all stay together until next summer, float the Comao (sp?) or Guadalupe river and hit up Schlitterbaun. If you go back to houston, there's a ton of museums and the Galleria mall. Dallas if you're into the club scene. There's a lot of cool stuff to see just north in the hill country. Search for small towns in hill country. You may not be that interested, but your girl will appreciate it

...get on I 10...go out to the "hill country"... or get on I 35 south and go to Laredo... but with the River Center and Sea World in your back yard... why go anywhere...? Just take a few day trips around Loop 1604... San Antonio is a great City to explore...
