It comes from the soliloquy that Moore delivers about " ...And who will be able to stand in the winds that would blow if there were no laws to protect them?..."

That would have to be a man for all seasons.

In his case by standing for the law he too is a man for all seasons, the good ones when the law is in his favor and the bad ones when the law is against him or so they would have you think. In his mind the law protected who he was even unto death.
