But can't say: I like these ones or I like those ones
But must say: I like these or I like those

Because it's repetitive to say "I like these ones". You are already specifying which ones you like - these. You don't need to continue to specify by adding 'ones' on the end.

But this you say "I like this one"...it does specify which one of these/those you do like.

I absolutely hate it when people use "these ones" or "those ones"!! It's redundant, and it tells me that they don't have a very good grasp of grammar.

My pet hate is "these ones and those ones".
It's completely unnecessary and redundant to add "ones".

No one ever told me that! I can see people thinking "ones" is a bit odd since "one" is also a number, but it isn't being used as a number in your sentence.
