I've watched some anime, but I'm looking for some other series to watch while I wait for the next Bleach episode... Please no "girl anime", if you know what I mean.
Preferred Genres: Action, Fantasy
I'd prefer watching recent anime (Year 2000+) though I'd watch any good anime.

I read the manga of Inuyasha, I guess I'll also try the anime... I also watched the first episode of Blood+, but I didn't have the time to continue. As for Trinity Blood, I never heard of it.
I also watched the first episode of Monster.
And I plan to watch Hellsing...

You are missing out by not watching One Piece. Try to watch Neon Genesis Evangelion.

Death Note and Hunter x Hunter are good.
You should check out Basilisk.
There are the classic ones like Ghost in the Shell and Evangeleon :Neo Genisis.
For a good comedy one try Cromartie High (bloody funny)

Give Black Lagoon a try. That's definitely not girly. Also, check out the new Hellsing Ultimate OVAs. They remake the old anime, but follow the manga more closely. Also check out Full Metal Panic, its a little bit mecha, but not too bad. Good luck!

Tsubasa Chronicle, you must watch it! It is the most awesome anime ever. Also, I believe that Busou Renkin and DNAngel fit into your preferred genres as well, but Tsubasa is the best.
