One, it concentrates the downward force of the knife blade onto a small area increasing the cutting ability.

Two, the pizza cutter exerts little perpendicular force so the pizza is not likely to slide.

Note: You could get a large two handled rocker knife to do the same thing, but because it would have to be longer than an extra large pizza, it would be cumbersome to use.
