Volunteer Day or Charity Day
You don't go to work. You take the day to donate or volunteer for a needy charity or cause. In a perfect world, the media would play it up just like they do Christmas or Valentines Day. I think that would be the best holiday.

Opposite Holiday Day. Instead of Thanksgiving, we'll complain about all the stuff we don't have. Instead of kissing under the mistletoe, we'll have loud, drunken, hurtful arguments under the mistletoe. Fun for all!

Singles day.
There's a day for mothers, fathers, grandparents and children, but no day for "singles" so I would start a day where people have to give the single people in their lives presents just like on mothers day and fathers day.
