They all have to 'try out' as you put it. Every year even some drafted players get cut from teams.
But to answer your question how about Rod Smith, WR at Denver. He was undrafted and currently holds many Denver career receiving records.

Bill Bates of the Dallas Cowboys. He was "too small and too slow" to play in the NFL. He ended up playing 15 seasons. He was the greatest special teams player ever. The 'special teams' position in the Pro-bowl was created for him because he was so good. He was a great clubhouse presence and one of the most popular Cowboys ever.

Rod Smith probably had the best career of any undrafted player in history. It's not likely that he will play this year and will most likely retire. He is the Denver Broncos all time leading receiver.

Well, he technically WAS drafted.. but reallly really low in the taking.. Mr. Tom Brady. Backup for years under Drew Bledsoe.... Id say he is probably the best example of an underdog making it.
