is it just a simple case of swapping it over with a 500w and plugging in some connections?

While there are some standard size Power Supplies, some are smaller. When you find the good match, then it's a matter of plugs and usually screws. I would be looking at http://www.newegg.com for a power supply. Maybe your manufacturer has a clear photo or drawing of your exact power supply in a manual on-line, so you can be sure. But NewEgg has good photos of each one that they sell. Look at the user Ratings too.

hi dave
changing power supplies is like you say basically mate,just unscrew the current power supply after disconnecting all connectors,including the motherboard 20pin(+4pin) and all 5v/pci-e 6pin connectors
then replace the current psu by removing the unit from its holding position and place you new power supply in place
then screw into place an attach all leads and connectors,note:make sure you connect the extra 12v 4pin connector to your motherboard if required,and if your sata hard drive or pci-express card requires a power supply then attach were appropriate
other things to make sure are the main exhuast fan is pointing downwards and if possible try not to use power splitters,especially to supply a graphic card
i have a agp geforce 7600gt and i have this powered by a single 5v molex connector,the hard drive(s) and dvdrw are powered by the other set of leads,this makes sure the 7600gt is getting 100% of the required power

Retail power supplies are 150mm wide. If your 250 watter has the same width, retail units would fit your case. This guide might be of help:

as long as your motherboard supports the cables, then yes, swap and plug away.

If it is a Dell or Compaq, you have to buy it from them.
