My favorite day trip is to Mt Charleston - Toiyabe National Forest, it's only 35 miles North of LV on I-95. It might be a little chilly up there in December though. There is a ski area.
The Grand Canyon is an awesome sight, anytime of the year.
Hoover Dam - Because of the terror alert and construction at the dam, traffic is backed up for miles during the day. They stop every car and inspect every van & truck.

If you learn which to use and when, you will save a lot of time & money.
You don't need to rent a car in LV and depending on the day trip(s) you want to take, you may or may not want to rent a car for the day.

Hoover dam is under heavy post 9/11 security. The cars are backed up for a long line and it could take hours to get there. Most of the casino's have Texas Holdem.
To lower the cost of the meals get a comp card. Have yourself comped for points while playing Texas Holdem. The longer you play the more the points. Use those points for to get a discount at the buffets. You will eat next to nothing and wont be hungry for the rest of the day.
Vegas.com is probably th best place to get a price for the hotel room. Even better than the hotels own website. If you are staying on the strip or Fremont Street you will probably not need a car rental. The bus line, the trolley and the monorail will get you anywhere on the strip. Otherwise get a car rental.
Go to Yahoo, travel, las vegas , hotels to see which hotel is the highest rated. However, most hotels listed in the top half will have you happy and want more. A good example would be the Sands. They are not the highest but they have Texas Holdem, a nice buffet. A monorail system, and good shows. (Note; this is just one example, you will have dozens of places to choose from. )

The best poker room in Las Vegas is at the Bellagio. They have the most players at the most limits. The limits start at $4-8 and go into the thousands for Bobby's room. The buffet is pricey at around $32 (dinner) but worth the stories you will tell about the food and how much you enjoyed it. I would try and stay at the Monte Carlo and tram over to the Bellagio to save a little money on the hotel.
Hoover Dam is a great day trip. I would rent a car just so I could do that. Go in the morning and have lunch there.

For playing Hold 'Em, you can get stakes anywhere from the $2-$4 table (or $3-$6 at larger casinos) upwards to whatever your want.
Decent meals will be in the $25 range at nice places but you can find a lot cheaper but why scrimp?
Personally, I like having a car in Las Vegas but that is me.
Go to your public library and get some travel books on Las Vegas and Nevada to get ideas of what to do.

The least expensive hold em tables that I have seen are 1-3. There are 2-4, 4-8, 10-20, 20-40 limit and so on. At anything below 10-20, expect at least 7 people to see the flop...often more. There are also 2,5, no limit games with a max buy in of around $200 (minimum buy ins vary) so you can experience NL poker without risking huge $$.
There are also a number of tournaments that range in cost from $40 and up. Not hard to find them in the $40-$100 range.
Go and have fun...some people are way too serious at these lower levels.
