I have just gotten into watching baseball and have noticed that quite a few players seem to have burnt hats, is there any particular reason they do this?

It's pine tar, actually. They rub their hands on their helmet and the pine tar gives them a better grip on their bat.

It is pine tar, it helps the batters hands stick to the bat for better grip, Manny Ramirez is one who uses alot of it. Look at this picture and see if its what you are talking about.
