I have some children's halloween costume patterns that I would like to make to fit adults. If I, for example, double or triple the pattern size, will that work, or will all the proportions be wrong? I'm a pretty inexperienced sewer, so please dumb the answers down a little!!

What are you trying to make? It's easier to "doctor up" an adult pattern to be a costume than to try to grade up a children's pattern for an adult... far, far easier. Body proportions are so different from kids to adults that it's not something I'd like to see an inexperienced person try.

I dont think it would work because children's proportions are so different to adults...if the costumes are for a woman, you would for exampe need to add darts where the bust is....we have smaller waists in proportion to our hips too....whereas a childs measurements are more straight up and down. It would be possible to base a costume on the patterns but you would be better getting an experienced seamstres to adapt them for you.

Take an old shirt the size you need, and cut the threads in the seems with a razor blade. Sometimes you can unravel the seem once you cut the thread, and use that as a pattern.

Your instinct is correct, the sloping will be different, for the armholes, neck et cetera. But since it's only for one night, it might work just fine. Just be prepared to make some extra slash-and-repairs when the final product is tried on.
