In our lab we performed an experiment where we mixed baking soda and hydrochloric acid. The mass of the reactants was more than the mass of the products.. why?

Write down your reaction. One of your products is H2CO3. However, this is really dissolved CO2. There is only so much CO2 that can be dissolved in water unless you want to pressurize the solution (like in sodas). So the rest goes poof into the air and you have the result you have, since you haven't accounted for all products.

as the first answer stated- CO2 gas is released, so this is why the mass of products physically had less weight because the gas escaped.
