it's one of my biology questions. i also have: why is salt not used on lawns and why do things like salted meat, strawberry jam, and sweet pickles not spoil even though they are exposed to bacteria.

Bacteria and weeds are living organisms and need the right mix of chemicals to survive. Salt causes outside of a cell causes the cell to loose water. Salt inside a cell causes a cell to gain water (water weight). Bacteria will die around salted meat because of the salt. Strawberry jam will stay fresh as long as the jar remains sealed. Once the seal is broken, the jam can grow mold. Sweet pickles are soaked in salt and vinegar. Vinegar is an acid that is not conducive to growing bacteria. Salt is a negative as well.

the solute(salt) and water amounts in the cells of the plant become unbalanced so the cell works to reach equilibrium so the cells shrivel and die.

It dehydrates them. Its kind of like when your at the movie theater and they give you really salty popcorn lol, you get really thirsty. The weeds just die of thirst.
